Hello Everyone,


May is almost my favorite month. May is lilac month here in the Northwest. Last year I had the gardener plant a lilac tree - and this year it had five luscious blossoms on it. I adore the scent of lilacs by my bed. Plant something, get your hands in the dirt and revel in nature's wonders. I hope you enjoy this newsletter.

Last month I had a great visit to Massachusetts. I feel very blessed in my work to meet unique people who are making a significant contribution to the world. I was captivated by the work of Ruth Mendelson and her CD Amazing Jellies - literally the sounds of Jelly Fish and the "Council of Sea Beings.

My friend Jan Goddard -Taylor's family has run that camp for over 50 years. I got a chance to tour the grounds last month with tennis courts, a lake for swimming and fishing plus the most beautiful park-like setting you can imagine. I have such happy memories of summer camp. Beet and Fennel Salad


For all you beet lovers out there - try this recipe.

Beet4 cooked medium beets
1/3 cup thinly sliced mild red onions - optional/I don't care for raw onions
1 cup thinly sliced celery
1 cup thinly sliced fennel - bulb not fronds
juice of one large orange
1 tbsp finely grated orange rind
2 tsp finely minced fresh ginger
¼ cup olive oil
1 tbsp soy sauce
1/2 tsp salt
½ tsp fresh ground pepper
1 cup cooked garbanzo beans
½ cup minced parsley for garnish

Wash beets, cut off root and stems, do not peel beets. In a large pot cover beets with water and bring to boil. Simmer about 20 minutes or until beets are tender. Cool beets and peel under cold running water. Skin should remove easily. Chop beets into bite-size pieces. Add all remaining ingredients and toss well. Garnish with minced parsley. Serves 4.
