Dear Caroline,

Give thanks for summer - a time of healthy eating! There are fresh veggies in the garden, farmer's markets are open on the weekend and there is no excuse to increase your fresh fruit and vegetable consumption.

Try this summer coleslaw recipe - a departure from the usual.

Recipe:
Strawberry Sesame Coleslaw

1/3 head green cabbage - finely shredded or finely sliced
2 organic carrots peeled and grated
2 stalks celery - diced
1/2 apple diced
1/3 cup toasted sesame seeds or 1/3 cup sunflower seeds
1/3 cup walnut pieces chopped
Dressing:
1/4 cup organic mayonnaise
3 teaspoons tamari sauce
Juice of one orange
Juice of one lime or substitute 4 tbsp vinegar for citrus juices
1 tbsp sesame oil - or olive oil
Salt and pepper to taste

Combine all ingredients coating the cabbage and other items entirely in the dressing.  Chill for at least 20 minutes. Before serving, garnish with a sprinkling of fresh raspberries or strawberries.

Lyme Disease

Caroline SutherlandNow that it's summer we are outside enjoying the woods, flora and fauna. Tick's carried by deer and other wild animals can penetrate human skin, get a foot hold and cause all kinds of problems. Lyme or tick borne disease is quite common in the eastern part of the country. Frequently during my teleconferences and seminars, people mention Lyme disease. In fact one of my friends at church was infected with a tick bite and the after- effects have left her severely debilitated.

I am a big fan of The Townsend Letter - The Examiner of Alternative Medicine which is produced monthly here in the Northwest in the beautiful town of Port Townsend, hence its name. Every month an article or two in the Townsend Letter catches my eye. This month, in particular, regarding the subject of Lyme disease and summer, Dr James Schaller MD an expert on Lyme Disease had an interesting article.

Dr Schaller has written many books on the subject of Lyme Disease, chronic illness, fibromyalgia and chemical sensitivities. He knows his subject and can offer hope and practical treatments for Lyme sufferers.

My Favorite Summer Book
  Soloing South
A few weeks ago we just happened to be in our local independent Bellingham bookstore. I am always cruising the biography section looking for true story and a good yarn. Later that evening we were treated to a wonderful slide presentation by Jennifer Hahn an expert kayaker from this area. She described her solo kayak trip from Alaska to Bellingham. If you would like a good summer read, I would recommend Spirited Waters: Soloing South Through the Inside Passage. Jennifer has a way with words. She colorfully describes encounters with wildlife, bears at a distance (thankfully) meetings with lighthouse keepers and preparing dinners of kelp and seaweed - not to mention sea urchins. With every page you are with Jennifer on her rhythmic paddle over miles of ocean - turbulent and calm.
